New Orleans Hurricane Mocktail (with Fassionola)

A virgin Hurricane made the real New Orleans way — with fassionola syrup for that famous red glow. No rum, all storm.

Ingredients
  

For the homemade fassionola (makes ~2 cups):
  • 2 cups strawberries chopped (frozen is great)
  • 1 cup sugar
  • 1 cup water
  • ½ cup passion fruit purée frozen pulp works well
  • ½ cup pineapple juice
  • 2 tbsp dried hibiscus flowers optional — adds color and a floral note
For one Hurricane Mocktail:
  • 2 oz fassionola homemade above, or store-bought
  • 2 oz orange juice we usually use clementine juice
  • 1 oz fresh lime juice
  • 2-3 oz cold sparkling water (Topo Chico is best) replaces the rum's volume; lightens it
  • Crushed ice
  • Garnish: orange half-wheel + maraschino cherry gotta make it fancy

Method
 

Make the fassionola:
  1. Combine strawberries, sugar, water, passion fruit purée, and pineapple juice in a saucepan. Bring to a gentle simmer over medium heat — don't let it boil over.
  2. Lower the heat and simmer gently 10 minutes, until the fruit is very soft.
  3. Off the heat, stir in the hibiscus (if using) and steep 10 minutes.
  4. Strain through a fine-mesh strainer, pressing the fruit. Cool fully. Store in the fridge up to 2 weeks.
Build the hurricane mocktail:
  1. Fill a tall hurricane glass with crushed ice. (or any glass)
  2. Add the orange juice, lime juice, and sparkling water.
  3. Pour the fassionola in last, slowly — it sinks and creates the "sunset." Don't stir.
  4. Garnish with an orange half-wheel and a cherry. Serve with a big straw. Then stir it around like a giant storm.

Notes

Store-bought: Cocktail & Sons fassionola is the New Orleans pick (seasonal). We also roll with BG Reynolds in our house. Any red fassionola works.
Make it fizzy: Skip the juice and stir 1–2 oz fassionola into a glass of sparkling water for a kid-favorite fassionola soda.
No grenadine needed: Fassionola already brings the red. (Grenadine was just the later stand-in.)
Color trick: The slow fassionola pour over crushed ice gives the gradient with no layering tools
